
At the end of the study, it was found that in the cohort that consumed olive oil, there was a statistically significant decrease in the concentration of inflammatory markers in the hypothalamus – the main center for regulating metabolic functions in the body. After several weeks of the experiment, researchers noted that the mice in the second group maintained normal weight, and the level of inflammation in the arcuate nucleus of the hypothalamus, which is regularly affected in the development of obesity, also decreased. Researchers attribute the effect to the high content of polyphenols and vitamin E, which have antioxidant properties. Scientists concluded that extra virgin olive oil can be a promising method for preventing metabolic disorders associated with obesity.
