
German scientists have created a new version of the traditional Bavarian white sausage by incorporating mealworms, a move that has triggered a wave of negative reactions on social media, according to Bild newspaper.
As the publication notes, the experiment is giving a whole new meaning to the phrase “Made in Germany.” Students at the university in Kulmbach, Bavaria, have added dried insect powder to the classic recipe, which traditionally includes pork, beef, parsley, spices, and salt.
Researchers and students from the University of Bayreuth replaced up to 20 percent of the minced pork with powder made from dried insects as part of a scientific project. This adjustment affected the sausage’s appearance, giving it a darker hue compared to the original.
Local residents strongly criticized the initiative online, calling the experiment on a beloved national dish a “perversion.” According to project leader Janina Henkel‑Oberlander, a professor of nutritional biochemistry, the team did not anticipate such a strong backlash and underestimated the public reaction.
The scientists explained that the recipe was developed as part of the search for alternative protein sources to help protect the climate. While the insect additive is officially permitted in EU countries, there are currently no plans to launch the mealworm‑infused sausages for mass sale in Germany.
